Ceviche is a seaside specialty, as a California girl and daughter to a fisherman I was raised with ceviche and have never feared it, for those that may be nervous about raw fish “cooked’ in lime juice, the cauliflower substitution is a surprising joy and an equally light meal on a hot day. Join it with that roasted Tomatillo Salsa and you have yourself a party!

Tomatoes are the simplest harvest anyone can have even if they pot a few starters on their front stoop or sun-kissed balcony. Needless to say, tomatoes from the vine are a real blessing and it’s more often than not that whatever I see in the garden inspires a meal that brightens my heart.
