SPANISH RICE

AS SIMPLE AS COOKING RICE!

Sometimes I’ll make Spanish rice just because it’s more delicious! As a kid, I hated rice, now I realize it’s all about the sauce. For this dish, the sauce is basically hot salsa :) 

INGREDIENTS

1 tbsp tomato paste or 1/4 cup sauce

1/2 minced medium onion

1 tbsp oil

• Sauté onion, in oil until glossy add tomato sauce and one cup rice with two cups water (depending on grain variety).

• Cook rice for 30-45 minutes and stir.

• Add salt and Cheyenne to taste, serve with beans, roasted seasonal veggies with tortillas, chips or salad. Enjoy! 

TOMATILLO SALSA

GREEN TOMATOES OPTIONAL

This summer I celebrated my birthday by making a Mexican fiesta for my family in Germany. Germans are probably one of the hardest audiences to impress, they also think cilantro tastes like soap, but despite my odds, I think they still enjoyed the offerings. I also ended up using green tomatoes instead of tomatillos which are non existent in Germany and it still tasted on point! Don’t be afraid, this salsa is easier and less work than normal salsa. 

INGREDIENTS

1/2 coliflower finely sliced

4-5 limes juiced

1 teaspoon sea salt

1/2 cup minced cilantro

1/2 cup minced onion

1/2 cup minced peppers or jalapeño
